MY WINE
Catartico
CATARTICO was born from the desire to create a complex and contemplative white wine, with a significant structure that remains balanced and never cloying.
A short maceration enhances the wine with pronounced aromas of ripe and candied fruit, spices, and a bold scent of Mediterranean scrub, complemented by a delicate balsamic note.
Visually, its intense orange hue immediately stands out, derived from the pigments in the grape skins.
With excellent drinkability and vibrant acidity, it pairs beautifully with traditional Sicilian dishes with bold flavors, aged cheeses, and—the pairing I personally love —with both fish and meat tartare.
